Cut crackling rind into strips slightly bigger than your desired pork scratching size.
Boil in water for 10 minutes.
Drain and pat dry.
Place on baking tray and sprinkle with salt.
Pop in pre-heated oven at 220 degrees.
Cook until crispy and crackling like. You will have to drain off fat as it cooks.
Cool and sprinkle with salt. Eat them warm or cold.
Delicious pub snack in your own home.
